In this class, Chef Rishika will guide you through the essential techniques of northern Indian cuisine, focusing on balancing spices, textures and flavors to create iconic dishes. You will learn tricks that will elevate your cooking, enhance the aromas and teach you how to properly use spices for maximum impact.
Start by preparing ragada chaat, a crispy potato patty topped with yogurt, tamarind chutney and fresh herbs. Then, marinate and grill haryali chicken tikka, a vibrant green chicken dish infused with spinach, cilantro and spices. For the main course, you’ll make paneer lababdar with paneer in a rich tomato gravy and vegetable pulao, a fragrant rice dish spiced with saffron and cardamom. Finish with rava kesari, a comforting saffron semolina halwa.
Guests are welcome to provide wine and beer to enjoy during the class.
