Whipped Goat Cheese & Fig Dip

Description

Creamy and craveable, this whipped goat cheese and fig dip is a perfect mix of savory and sweet, making it an ideal choice for your next get-together or snack break. It all starts with crispy bacon, cooked with brown sugar, thyme, and a pinch of cayenne for a little heat.

Ingredients:

  • 4 slices bacon, medium diced
  • 1 1/2 teaspoons packed brown sugar
  • 1 teaspoon chopped thyme leaves, plus more for garnish
  • 1/8 teaspoon cayenne pepper
  • 12 ounces goat cheese, room temperature
  • 4 ounces cream cheese, room temperature
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/3 cup fig jam
  • 2 teaspoons balsamic vinegar
  • Flaky sea salt, for garnish
  • Assorted crackers and vegetables, for serving

Directions:

  1. Heat oven to 375°F. Line a sheet pan with parchment paper. Toss bacon with brown sugar, chopped thyme, and cayenne. Arrange in a single layer on the prepared sheet pan. Bake until crispy, 15 minutes. Transfer to a paper towel-lined plate.
  2. In a food processor, combine the goat cheese, cream cheese, olive oil, lemon juice, and salt. Pulse until smooth and well combined. Transfer to 1 quart baking dish.
  3. In a small bowl, stir together fig jam and balsamic vinegar. Spread over goat cheese, leaving edges exposed. Bake for 10 to 15 minutes or until warmed through.
  4. Top with bacon and garnish with thyme sprigs. Serve with assorted crackers and vegetables.
