Whipped Goat Cheese & Fig Dip

Description
Creamy and craveable, this whipped goat cheese and fig dip is a perfect mix of savory and sweet, making it an ideal choice for your next get-together or snack break. It all starts with crispy bacon, cooked with brown sugar, thyme, and a pinch of cayenne for a little heat.
Ingredients:
- 4 slices bacon, medium diced
- 1 1/2 teaspoons packed brown sugar
- 1 teaspoon chopped thyme leaves, plus more for garnish
- 1/8 teaspoon cayenne pepper
- 12 ounces goat cheese, room temperature
- 4 ounces cream cheese, room temperature
- 2 tablespoons extra virgin olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/3 cup fig jam
- 2 teaspoons balsamic vinegar
- Flaky sea salt, for garnish
- Assorted crackers and vegetables, for serving
Directions:
- Heat oven to 375°F. Line a sheet pan with parchment paper. Toss bacon with brown sugar, chopped thyme, and cayenne. Arrange in a single layer on the prepared sheet pan. Bake until crispy, 15 minutes. Transfer to a paper towel-lined plate.
- In a food processor, combine the goat cheese, cream cheese, olive oil, lemon juice, and salt. Pulse until smooth and well combined. Transfer to 1 quart baking dish.
- In a small bowl, stir together fig jam and balsamic vinegar. Spread over goat cheese, leaving edges exposed. Bake for 10 to 15 minutes or until warmed through.
- Top with bacon and garnish with thyme sprigs. Serve with assorted crackers and vegetables.
