Quick Black Bean Soup

Description

Ditch the slow-soaking dried legumes in place of easy refried beans in this hearty soup, with ham, vegetables, and chili seasoning.

Ingredients:

  • 1 teaspoon oil
  • 1/2 cup chopped green bell pepper
  • 1/4 cup finely chopped onion
  • 1 cup finely chopped cooked ham
  • 2 (15.5-oz.) cans refried black beans with lime juice
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon chili powder
  • 1 1/2 cups water
  • 2 tablespoons sour cream
  • 2 tablespoons chopped fresh cilantro, if desired

Directions:

  1. Heat oil in 3-quart saucepan over medium heat until hot. Add bell pepper and onion; cook and stir 2 to 3 minutes or until crisp-tender.
  2. Add all remaining ingredients except sour cream and cilantro; mix well. Cook over medium heat for about 5 minutes or until thoroughly heated, stirring frequently. Top individual servings with a dollop of sour cream. Sprinkle with cilantro.
