Meatball Sub Bites

Description

What's better than a decadent meatball sub slathered in rich tomato sauce and melted cheese? All that goodness tucked in a buttery biscuit! That's right, we just may have created the ultimate snack with this Meatball Sub Bites recipe! And here's the great news: they're super quick to make because there's virtually no prep, thanks to some fantastic premade ingredients.

Ingredients:

  • 1 can (16 oz) refrigerated Immaculate Baking Co.™ Organic Flaky Biscuits (8 Count)
  • 1 cup shredded mozzarella cheese (4 oz)
  • 1/3 cup marinara sauce (from 24-oz jar)
  • 16 frozen Italian-style beef meatballs (1/2 oz each), thawed
  • 3 tablespoons shredded Parmesan cheese

Directions:

  1. Heat oven to 350°F. Spray 16 regular-size muffin cups with cooking spray.
  2. Separate dough into 8 biscuits; separate each biscuit into 2 layers. Place biscuit halves in sprayed muffin cups, pressing to cover bottom and slightly up sides of cups.
  3. Sprinkle 1 tablespoon mozzarella cheese in each biscuit-lined cup. Spoon 1 teaspoon marinara sauce over cheese in each cup.
  4. Press 1 meatball into sauce and cheese mixture in each cup. Top each meatball with about 1/2 teaspoon Parmesan cheese.
  5. Bake 18 to 22 minutes until biscuits are deep golden brown and meatballs are hot (at least 165°F in center). Cool 5 minutes in pan; remove from pan with metal spatula.
