Italian Sausage and Tortellini Soup

Ingredients:

  • 1 lb bulk mild Italian sausage
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 3 cloves garlic, finely chopped
  • 2 cartons (32 oz each) Progresso™ chicken broth
  • 1 package (9 oz) refrigerated fresh cheese tortellini
  • 1 bag (5 oz) baby spinach

Directions:

  1. In 5-quart Dutch oven, cook sausage, onion, carrots and garlic over medium heat 8 to 10 minutes, stirring occasionally, until sausage is thoroughly cooked; drain.
  2. Stir in broth; heat to boiling over medium-high heat. Add tortellini; reduce heat to low and cook 8 to 12 minutes or until tortellini are tender. Stir in spinach and cook 1 to 2 minutes or until spinach is wilted.
