Caribbean Style Waldorf Salad

Description
Enjoy this salad that’s made with fruits and nuts – a tasty side dish that’s ready in just 15 minutes.
Ingredients:
- 1/2 cup mayonnaise or salad dressing
- 1/4 cup whipping cream
- 1 tablespoon fresh lemon juice
- 1 tablespoon milk
- 2 medium unpeeled red eating apples, coarsely chopped (2 cups)
- 1 cup fresh pineapple chunks
- 2 medium stalks celery, chopped (1 cup)
- 1/2 cup coarsely chopped pecans or walnuts
- 1/3 cup raisins
- 3 tablespoons flaked coconut
- 1/4 cup sweetened dried cranberries
- Bibb lettuce leaves or salad greens, if desired
Directions:
- In medium bowl, mix mayonnaise, whipping cream, lemon juice and milk until well blended.
- Stir in apples, pineapple, celery, nuts, raisins, coconut and cranberries. Serve salad on lettuce leaves. Cover; refrigerate any remaining salad.
