Caribbean Style Waldorf Salad

Description

Enjoy this salad that’s made with fruits and nuts – a tasty side dish that’s ready in just 15 minutes.

Ingredients:

  • 1/2 cup mayonnaise or salad dressing
  • 1/4 cup whipping cream
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon milk
  • 2 medium unpeeled red eating apples, coarsely chopped (2 cups)
  • 1 cup fresh pineapple chunks
  • 2 medium stalks celery, chopped (1 cup)
  • 1/2 cup coarsely chopped pecans or walnuts
  • 1/3 cup raisins
  • 3 tablespoons flaked coconut
  • 1/4 cup sweetened dried cranberries
  • Bibb lettuce leaves or salad greens, if desired

Directions:

  1. In medium bowl, mix mayonnaise, whipping cream, lemon juice and milk until well blended.
  2. Stir in apples, pineapple, celery, nuts, raisins, coconut and cranberries. Serve salad on lettuce leaves. Cover; refrigerate any remaining salad.
