Banana-Chocolate Chip Muffins

Description

All natural fat free yogurt helps make these muffins moist and delicious!

Ingredients:

  • 3/4 cup mashed ripe bananas (about 2 small)
  • 1/4 cup canola or vegetable oil
  • 3/4 cup Yoplait® All Natural Fat Free plain yogurt (from 2-lb container)
  • 1 egg
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips

Directions:

  1. Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.
  2. In large bowl, beat bananas, oil, yogurt and egg with whisk or fork. Stir in remaining ingredients just until flour is moistened. Divide batter evenly among muffin cups.
  3. Bake 17 to 20 minutes or until golden brown. Cool 5 minutes; remove from pan.
